How to choose fruit for apricot recipes

Choose undamaged, well coloured fruit — though neither colour nor softness are reliable indicators of well-flavoured apricots. The best indicator is a sweet aroma. Store ripe apricots in a covered container in the fridge and use them within a day or two. Dried apricots will keep well in the cupboard, in their original packaging or a covered container, for months.

Dried apricots are always available and are one of the best of dried fruits. They make a delicious snack, or stew and serve with rice pudding or ice-cream.

How to ripen apricots

Ripen apricots by standing them at room temperature, and speed up the process by enclosing them in a paper bag. They will soften and may colour up but they will never have the flavour of tree-ripened fruit. Their season is short, peaking in summer when there is the best chance of finding tree-ripened fruit.

If they turn out to be disappointing in flavour or woolly in texture, all is not lost. Even mediocre apricots are transformed into something quite delicious when cooked. Their sharp-sweet flavour is particularly accommodating and will marry beautifully with pork, chicken, lamb and turkey, as well as other fruits, nuts and spices.
