How to choose and store zucchini

Zucchini are available in green or yellow and are available all year round. The smaller, the better is a good rule for buying zucchini and small squash, unless a certain size is required for stuffing. Buy zucchini that is brightly coloured with a sheen on the skin, and firm with no soft spots. Enclose zucchini or squash in a paper bag, then in a plastic one; store in the refrigerator. Use within a few days.

Zucchini are excellent coarsely grated and mixed with herbs for a salad to go with a grill, or grated and tossed in foaming butter with a touch of nutmeg just until hot. They go beautifully with spices and rich flavours and are happy sliced into curry, ratatouille or risotto. Add zucchini late in the cooking so that the slices will be just softened. Zucchini flowers are a summer treat to dip into batter and deep-fry or stuff with a savoury mixture, coat with egg and breadcrumbs and pan-fry.
