This rolled air fryer pork loin with an apricot, fetta, and pistachio stuffing is the perfect balance of flavour and texture. Cooking your Christmas roast in the air fryer means your oven is free for other dishes, like roast potatoes or a glazed ham.

APRICOT, FETTA & PISTACHIO STUFFING
Heat half the oil in a medium frying pan; cook onion and garlic, stirring, until onion softens. Transfer to a large bowl; stir in remaining ingredients. Season to taste; cool.
Open out the pork and place on a board, rind-side down. Slice through the thickest part of the pork horizontally, without cutting all the way through. Open out the pork to form one large piece, press the stuffing along the width of the pork. Roll pork to enclose stuffing, securing with kitchen string at 2cm intervals. Rub remaining oil and salt over pork rind.
Preheat air fryer to 200°C for 3 minutes.
Taking care, place pork, rind side up in the air-fryer basket. Cook, uncovered, for 40 minutes or until rind is blistered and browned. Reset the oven temperature to 160°C, roast for a further 30 minutes or until pork is tender (internal temperature 70-75°C is reached on a meat thermometer).
Remove pork from dish, cover loosely with foil; stand 10 minutes before carving.
Serve sliced pork with roast potatoes, if desired.
How long to cook pork roast in an air fryer?
Cooking time will vary for your air fryer pork, depending on the weight. In this recipe we have used 1.6kg boneless loin and cooked for 40 mins at 200°C, then a further 30 mins at 160°C. Use a meat thermometer to test the internal temperature of the pork. Aim for 70-75°C for perfectly cooked pork.
How to make breadcrumbs for stuffing
Fresh breadcrumbs are best made from slightly stale bread. If you only have fresh bread, leave slices on the bench for a few hours to stale. Process the bread, with or without crusts, until coarse crumbs form.
