How to make apricot danish in your pie maker

Easy as pie...

Your pie maker can make more than just pie! These simple fruit danishes only take a few ingredients and less than half an hour to make.

1.Lightly grease and preheat a 4-hole (⅓-cup/80ml) pie maker. Cut four 5cm x 15cm strips of baking paper.
2.Drain apricots on paper towel to absorb excess syrup.
3.Cut four 9cm squares from the puff pastry. Place baking paper strips on a work surface; top with puff pastry squares in the centre. Place 2 teaspoons of cream cheese in the centre of each pastry square, top with 1 teaspoon of jam and 2 apricot halves (on top of each other); press down. Fold opposite corners of pastry over apricots to partially cover; brush pastry with egg.
4.Using baking paper strips for support, lift pastries into prepared holes. Close lid; cook for 10 minutes or until golden brown. Using paper strips, lift pastries from holes and transfer to a wire rack. Brush warm pastries with remaining jam; cool.

You can also use canned peaches or plums instead of apricots, if you like. Pastries are best eaten on the day they are made.
