Choosing beef for stews and casseroles

The recipes in this stews and casserole collection will specify the kind of beef to use for best results. However, there is a general rule to keep in mind. The best meats for slow cooking are secondary cuts, such as topside, oyster, blade, skirt, round, chuck and gravy beef. Why? Freezing tips for stews and casseroles

The wonderful thing about many of these beef casserole and stew recipes is that they are ideal for freezing. Four key freezing rules to keep in mind for food safety are:

  • Ensure any bag or container is well-sealed and airtight.
  • Your freezer temperature is between -15°C and -18°C.
  • Food should be cool, or at room temperature, before freezing.
  • Do not use glass containers.
