The best cuts for slow cooked beef recipes

The best meats for slow cooking are secondary cuts, such as topside, oyster, blade, skirt, round, chuck and gravy beef. These cuts contain lots of gelatinous connective tissues, which break down during the long cooking time and help to keep the meat moist.

They’re often much cheaper than premium cuts like sirloin but become deliciously tender and flavour-packed when cooked slowly. Lean prime cuts will simply become dry during long slow cooking.

Slow cooking tips

When browning or searing pieces of meat for slow cooking, cook the meat in small batches. It’s important to keep the heat high and the pan hot. If you cook too many pieces at a time, they’ll release a lot of juices and stew rather than brown.

Also, don’t cut the pieces of meat too small, unless the recipe specifies. It’s better to cook in larger chunks 5cm that can be broken up when tender.
