Method

1.Preheat oven to 150°C/300°F. Grease deep 15cm (6-inch) round cake pan; line base and side with baking paper, extending paper 5cm above side.
2.Using butter cake mix, make cake according to directions on packet. Spread mixture into pan until three-quarters full; bake about 1 hour. Stand cake in pan 5 minute; turn, top-side up, onto wire rack to cool.
3.Level cake top; turn cake, cut-side down, onto 20cm (8-inch) round or square prepared cake board or cake stand. Secure cake with a little warmed, strained apricot jam. Brush cake all over with jam.
4.Knead white icing on surface dusted with sifted icing sugar until icing loses its stickiness; tint icing blue using food colouring.
5.Roll icing into round large enough to cover cake. Using rolling pin, carefully lift icing over cake. Using hands dusted in icing sugar, mould icing over top and side of cake; rub icing gently with hands until smooth.
6.Trim icing neatly around base. Using picture as a guide, cut out lengths of boat shapes from paper. Position boats around cake; secure with tape.

White icing is also known as fondant (it’s the traditional icing used on wedding cakes). It is available in packets from the supermarket and cake decorating shops.
