Butter cream


1.Preheat oven to 180°C/160°C fan-forced. Grease 6-hole (¾-cup/180ml) texas muffin pan.
2.Make cake according to directions on packet. Drop ⅓ cup of the mixture into each hole; bake about 25 minutes. Stand cakes in pan 5 minutes; turn, top-side up, onto wire rack to cool.
3.To make butter cream, beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
4.Divide butter cream equally into three small bowls; tint each bowl with one of the suggested colours: green, pink and yellow.
5.Level tops of all cakes. Using picture as a guide, spread the tops and sides of three cakes with one of the coloured butter creams. Position cakes on 25cm-square prepared cake board; secure with a little butter cream.
6.Using picture as a guide, trim remaining three cakes into roof shapes. Leave tops of the roofs flat. Spread roofs all over with butter cream; position roofs on the houses. Outline with strips of the sour straps.
7.Remove licorice layer from allsorts; trim the coloured layer into door shapes, place in position on houses. Secure mini musk halves to doors with a little butter cream for door knobs.
8.Position BoPeep lollies and Smarties for windows and roofs. Cut fruit sticks in half; position for chimneys.

Make a cottage for each year of the birthday child’s age and, rather than using fruit sticks for the chimneys, use chunky coloured candles, instead. You’ll have about 1 cup of the cake mixture left over, enough to make another little house.
