Method

1.In a saucepan, combine fruit with apricot nectar; bring to the boil, reduce heat, cover. Simmer 5 minutes. Remove from heat, cover, stand mixture overnight.
2.Line base and side of deep 23cm round (or deep 19cm square) cake pan with 3 layers of paper.
3.In a large bowl, cream butter and sugar with electric mixer until just combined; add eggs quickly, one at a time, beating until just combined between each addition.
4.Stir in fruit mixture, then sifted dry ingredients. Spread mixture into prepared pan, bake in slow oven about 2½ hours. Cover with foil, cool in pan.
