Ingredients

Butter cream (1 quantity)

Method

1.Preheat oven to 180°C (160°C fan-forced). Line texas muffin pan with the texas paper case, line mini muffin pans with the mini paper cases.
2.Make cake according to directions on packet. Drop ⅓ cup of the mixture into the texas paper case, bake about 25 minutes. Drop 2 level teaspoons of the mixture into each mini paper case, bake about 15 minutes. Stand cakes in pans 5 minutes, turn, top-side up, onto wire rack to cool.
3.To make the butter cream. Beat the butter (and any flavouring if using) in a small bowl with an electric beater until the butter is as white as possible. (This will result in a whiter buttercream which will give you better results if colouring it). Gradually beat in half of the sifted icing sugar, then the milk, then the remaining sifted icing sugar.Beat until the butter cream is smooth and spreadable. Keep scraping down the side of the bowl during beating.
4.Divide butter cream equally into three small bowls, tint each bowl of butter cream with yellow colouring to give three varying shades of yellow (light, medium and dark).
5.Spread light yellow butter cream over the tops of 25 cakes, sprinkle lightly with the yellow jelly crystals, top each with a yellow Smartie.
6.Spread the medium yellow butter cream over the tops of 27 cakes, sprinkle lightly with orange sprinkles.
7.Spread the dark yellow butter cream over the top of the large cake; position and secure on the prepared board with a little butter cream. Use brown Smarties for eyes, and a small piece of licorice strap for the mouth.
8.Spread remaining dark yellow butter cream over the tops of the remaining small cakes, top each with a Fizzer. Using picture as a guide, position and secure small cakes to the board with a little butter cream.

Equipment 6-hole (¾-cup/180ml) texas muffin pan 7 x 12-hole (1-tablespoon/20ml) mini muffin pans 1 yellow texas muffin paper case 77 yellow mini muffin paper cases 50cm-square prepared cake board (see basic know-how number 2, pages 160-161) Decorations 85g packet yellow jelly crystals 400g packet Smarties 1 tablespoon orange sprinkles 5cm piece black licorice strap 25 white Fizzers We used 77 mini muffin sized cakes for the starfish ­ use more or less to get the shape you like best. Stand the cake mixture at room temperature while you bake the cakes in batches.
