Basic cup cakes

Basic cup cakes make a great project when you're looking to bake with the kids on a wet afternoon.



1.Preheat oven to 180°C (160°C fan-forced). fan forced. Line a 12 hole patty pan tin with patty cases.
2.Beat together butter, sugar and vanilla essence until light and creamy.
3.Add eggs gradually, beating well between each addition. Add the flour and milk alternately in two batches.
4.Divide mixture among patty cases. Bake in pre-heated oven for 15-20 minutes. Allow to cool before spreading with the icing.
5.To make the icing, sift icing sugar into a bowl. Beat in enough milk to make a spreadable consistency.

For a variation, divide the icing into little bowls and add a drop or two of different food colouring to each bowl.
