Peel and thinly slice garlic. Peel and finely grate ginger. Add garlic, ginger, kecap manis and 2 cups (500ml) water to slow cooker. Add chicken in a single layer.

Heat slow cooker on LOW. Cook, covered, turning chicken halfway through cooking time, for 7 hours or until chicken is very tender. Transfer chicken to a large plate or tray. Strain sauce; return to cooker.

Adjust setting to ‘reduce’ (HIGH); simmer sauce for 15 minutes or until reduced slightly. Serve chicken with sauce as a glaze; season. Scatter with mint leaves.
