The air fryer isn’t just about savoury food, it’s brilliant at sweet treats too! Treat yourself and loved ones to this sweet and golden air fryer banana bread. With cinnamon spice and crunchy walnuts, it’s perfect for using those very ripe bananas in the fruit bowl.

Grease a 10.5cm x 20cm loaf pan; line base and sides with baking paper, ensuring paper sits flush with the rim.

Beat butter, brown sugar and vanilla in a medium bowl with an electric mixer until pale and fluffy. Beat in eggs, one at a time, until just combined, then mashed banana and maple syrup. Sift over flour, baking powder, bicarb, cinnamon and salt. Add walnuts; stir with a large spoon until combined. Spoon mixture into loaf pan; smooth surface.

Preheat a 5.3-litre air fryer to 160°C for 3 minutes.

Taking care, place loaf pan in the air fryer basket; at 160°C, cook for 10 minutes.

Place banana halves, cut-side up, on top of bread. Cover loaf pan with foil and pierce the foil; at 160°C, cook for 40 minutes.

Remove foil; cook for another 5 minutes until a skewer inserted into the centre comes out clean. Remove from the basket. Leave bread in pan for 10 minutes before turning, top-side up, onto a wire rack to cool. Sprinkle top with demerara sugar while hot.

7.

Serve slices of banana bread topped with ricotta and drizzled with honey.

How many bananas are needed for air fryer banana bread?

You will need 3 large overripe bananas to make 1½ cups mashed banana for the batter, plus 2 small bananas for the top.

How to store banana bread

Any leftover air fryer banana bread can be stored in an airtight container for up to 3 days and served toasted, or can be sliced and frozen for up to 3 months.
