Does beetroot need to be cooked for salad?

You can use raw beetroot in salad when it’s grated or very finely cut, like in this Freekeh tabbouleh beetroot recipe. But for larger chunks of beetroot you would need to boil or bake it so that it’s not hard to eat. Some recipes also make it simple by using tinned or pickled beetroot, like this one with asparagus and feta, so check the ingredients before you go shopping.

Do you peel beetroot before cutting?

It’s a good idea to peel beetroot before you eat it as the outer skin can be tough or have blemishes. A lot of people will peel it before they cut or grate it, but you could also wait until after it’s cooked depending on the way you prepare it. If in doubt, follow a recipe.
