Super-healthy and versatile, this classic zucchini slice recipe is so easy to make. All you need is just seven ingredients (including pantry staples) and a combined prep and cooking time of around an hour.

Preheat oven to 180°C (160°C fan-forced).
In a large bowl, combine zucchini, onion, bacon, cheese, sifted flour, oil, and lightly beaten eggs. Season with salt and pepper.
Pour into a greased and lined lamington tin (16cm x 26cm).
Bake for about 30-40 minutes, or until well browned.
Cut into squares and garnish with parsley, if desired, before serving.

What other vegetables can be used?
If zucchinis aren’t your favourite vegetable, you can swap all or some of the zucchini! Instead of zucchini, use other vegetables such as carrot, capsicum, corn or blanched chopped silverbeet.

For super quick lunch box meals, cut it into pieces before freezing and either freeze in one large container, separating the pieces slightly, or in individual containers, ready to put straight into the school or work lunch bag.
What to serve with zucchini slice
In summer try serving it with a simple summer tomato salad, tasty lemon and dill chickpea salad or for something a bit different, serve it with shaved cabbage with pecorino balsamic.
In winter, serve it with roasted baby carrots with garlic, a warm salad of root vegetables, or a quick and easy green bean salad.
Why is my zucchini slice soggy?
Too much moisture in the mixture can cause your zucchini slice to turn out soggy. If that’s the case, you could squeeze out excess moisture from the grated zucchini to minimise moisture.
Keep in mind that it’s never going to be crispy, but it should be light and tender with a firmer texture than a frittata due to the flour component in the mixture.
How to tell when zucchini slice is cooked
Our tip is to bake it on the bottom shelf of the oven to ensure that the base is well-browned. Testing with a skewer towards the end of cooking time would also ensure that the mixture is set and completely cooked through.
