Upside-down cashew and maple syrup loaf

The crunchy cashew layer turns this simple loaf, into a spectacular sweet dessert or afternoon tea snack.

1.Preheat oven to 180°C/160°C fan-forced. Grease 15cm x 25cm loaf pan; line base and long sides with baking paper, extending paper 5cm above edges.
2.Beat butter, sugar, eggs, sifted flours and spice, cream and syrup in medium bowl on low speed with electric mixer until combined. Increase speed to medium; beat about 3 minutes or until mixture is smooth and pale in colour.
3.Beat extra butter, sugar and syrup in small bowl with wooden spoon until smooth; spread over base of pan. Sprinkle with cashews; spread with cake mixture. Bake about 1 hour. Stand cake in pan 5 minutes before turning out onto wire rack to cool.
