Method

1.Combine coconut and milk, stand at room temperature for 1 hour.
2.Grease a 14cm x 21cm loaf pan, line base with paper; grease paper.
3.Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy; beat in eggs one at a time, beat until combined. Transfer mixture to large bowl. Stir in half the coconut mixture and half the sifted flour, then stir in remaining coconut mixture and flour. Stir until smooth.
4.Pour mixture into prepared pan. Bake at 160°C for about 1½ hours. Stand 5 minutes before turning on to wire rack to cool.
5.To make orange icing, sift icing sugar into bowl, stir in extra butter and enough juice to mix to a spreadable consistency.
6.Spread cold cake with icing. Decorate with orange wedges if desired.
