.Preheat oven to 180°C/160°C fan-forced. Line texas muffin pan with the paper cases.
.Make cake according to directions on packet. Drop ⅓ cup of the mixture into each paper case; bake about 25 minutes. Stand cakes in pan 5 minutes; turn, top-side up, onto wire rack to cool.
.Brush tops of cakes with jam. On a surface dusted with sifted icing sugar, knead the ready-made icing until smooth. Divide icing into five equal portions; tint each portion with one of the suggested colours. Roll each portion into a 3mm thickness; using 8cm cutter, cut one round from each portion.
.Position icing rounds on top of cakes. Using a small pointed knife, cut a 2.5cm hole in the centre of the icing on each cake. Carefully remove and discard the icing centre. Gently push the dolls into the centre of each cake.
.Brush a tiny amount of water on the back of the small icing hearts; position around cakes.
We’ve made five fairy cakes, however, there will be enough cake mixture to make a total of nine cakes one for each guest would be ideal. Match the colour of the paper cases to the dolls for a pretty effect. Use the cakes as gifts for the guests to take home, or as the main attraction. You could place the fairies in a ring on a plate, cake stand or prepared cake board.
