Smartie biscuits will never go out of style. They’re simple to make, colourful, tasty, and perfect for a party or lunch box. Decorate each biscuit with a mix of colours, or go for a single colour on each biscuit to mix things up. The choice is yours!

Method
Preheat oven to moderate, 180°C. Lightly grease 2 large baking trays.
In a large bowl, using an electric mixer, cream butter and sugars together until light and fluffy. Beat in egg and vanilla until combined.
Sift flours and soda together. Lightly fold into the creamed butter.
Roll level tablespoonfuls of dough into balls. Arrange on prepared trays 4cm apart. Flatten slightly. Top with 5 or 6 Smarties.
Bake, 10-12 minutes, until golden. Cool on trays, 5 minutes, before transferring to a wire rack to cool completely. Store smartie biscuits in an airtight container.

These smartie biscuits will still be soft when they’re cooked, but will harden on cooling.
