This easy low carb pork stir fry with lime, peanuts and sweet chilli dressing is a healthy and fresh dinner idea for the warmer months. You’ll need to allow at least three hours for marinating, so prep this recipe in the morning, and come home to a fast and delicious dinner ready to cook.

Method
Place pork in a large bowl with juice and ginger; toss pork to coat in mixture. Cover; refrigerate 3 hours or overnight.
Make sweet chilli dressing.
Heat a lightly oiled wok or large frying pan over high heat; stir-fry pork, in batches, until cooked through. Remove from wok; cover to keep warm.
Stir-fry choy sum with the water in wok for 1 minute or until just wilted.
Place pork and choy sum in a large bowl with carrot, coriander, green onion and dressing; toss gently to combine. Top with peanuts and mint. Serve with lime cheeks.
SWEET CHILLI DRESSING
Place ingredients in a screw-top jar; shake well.
Use a mandoline or V-slicer to cut carrot into thin matchsticks.

Swap the pork fillets for chicken thigh fillets. Fresh Vietnamese mint can be found at selected Coles, Bunnings and Harris Farm Markets. If you can’t find it, substitute for regular fresh mint. Craving some carbs? Serve this pork stir fry with noodles or rice.
