Ready for a quick and delicious dinner? This beef mince stir fry with noodles is just what you need to save the day! It’s packed with flavour, super easy to make, and perfect for the nights you need something tasty in a hurry.

Heat a large frying pan over high heat and add a drizzle of olive oil. Toss in the beef mince and break it up with a spoon. Let it sit in the pan, so it caramelises—this is where the magic happens!

When the beef is browned and delicious, toss in the stir fry veggies, give everything a good mix so the flavours start to mingle.

Now, it’s sauce time! Pour in the teriyaki sauce along with 1 cup water. Stir everything together until it’s nice and saucy.

Soften the udon noodles in a bowl of warm water for 1 minute, then drain.

Add the noodles to the stir-fry. Using salad servers (trust me, it makes it so much easier!), toss everything together. Once the noodles are fully coated in sauce and everything is nice and hot, your beef mince stir fry is ready.

What vegetables are good in a stir fry?

Any vegetables that add crunch and colour but cook quickly are great options in a stir fry. Popular choices include carrot, capsicum, broccoli, mushrooms, bok choy, snow peas or sugar snap peas, and onion.

To save time (or if you’re unsure what to choose), major supermarkets sell stir fry mixes, with fresh or frozen options available.
