These prosciutto wrapped lamb cutlets hide a delicious creamy and boldly flavoured centre. Serve with some grilled mediterranean vegetables for a tasty, low-carb meal.

Method

1.Cut a small horizontal slit in the side of each lamb cutlet.
2.Combine cheese, tomatoes and basil in medium bowl; season. Press cheese mixture into lamb pockets. Wrap each cutlet with a slice of prosciutto.
3.Cook cutlets in heated oiled large frying pan until browned both sides and cooked through.
