1.Preheat oven to 200°C (180°C fan-forced). Grease 12-hole (¹/³-cup/80ml) muffin pan or 12 oval friand pans, stand on oven tray.
2.Place egg whites in medium bowl, beat with a fork. Stir in butter, hazelnut meal, sifted icing sugar and flour.
3.Core pear, cut lengthways into 12 even slices.
4.Spoon mixture into pan holes, top each with one slice pear and two nut halves.
5.Bake friands about 20 minutes. Stand friands in pan 5 minutes; turn, top-side up, onto wire rack to cool.

Corella pears have only a short season, if they’re not available use thinly sliced apple, red-skinned look best instead.
