These simple Thai fish cakes are moist and juicy when cooked in your air fryer. Flavoured with lime and red Thai curry paste, they’re super tasty too.
If you’re looking for a quick, tasty and nutritious dinner idea for the family, you can’t go past the humble fish cake. They’re delicious enjoyed on their own, served on a bun with creamy mayonnaise, or accompanied by a fresh garden salad.
1.Process fish, curry paste, lime rind and juice, and fish sauce in a food processor until mixture forms a smooth paste; stir in green onion and coriander. With damp hands, shape mixture into 12 patties. Spray generously all over with cooking spray.
2.Preheat a 7-litre air fryer to 200˚C/400˚F for 3 minutes.
3.Taking care, place fish cakes in the air fryer basket; at 200˚C/400˚F, cook for 8 minutes, turning halfway through cooking time, or until golden and cooked through.
4.Top fish cakes with extra chopped coriander; serve with a mixed green salad, lime wedges and sweet chilli sauce for dipping.
