Party patty cakes

You can decorate these party patty cakes just like we have, or you can use your favourite lollies to make up your own designs. For a fun, if messy, party game place all the bits and pieces out on a long table, and let the kids decorate their own cupcake.

Vanilla butter frosting


1.Check that a shelf is in the middle of the oven and that two deep 12-hole patty pans fit side by side. Turn the oven to 180°C. Put the patty cases into the patty pans. Put the butter, vanilla essence and sugar in the small bowl of an electric mixer, then beat on medium speed until the mixture is pale and creamy, about 5 minutes.
2.Break one egg into a small jug and add it to the butter mixture. Beat on medium speed until the egg is mixed in. Do the same thing again with the second egg.
3.Put the butter mixture in a large bowl then sift half the flour through a sieve into the bowl. Add half the milk and stir until both the flour and the milk are mixed in. Then do the same with the rest of the flour and milk.
4.Using a spoon, put the cake mixture into the patty cases. Put the pans in the oven and bake for about 15 minutes or until the cakes are browned lightly. Using oven mitts, take the pans out of the oven and put them on a wire cake rack to cool for 15 minutes. When they are cold, take the cakes out of the pans.
5.To make vanilla bean frosting, put the butter in a medium bowl, then sift half the icing sugar over it through a sieve. Add half the milk and all the vanilla essence, then stir with a wooden spoon until the mixture is smooth. Do the same with the rest of the icing sugar and the milk. Divide the icing among some small bowls and colour each with a few drops of the food colouring of your choice.
6.Put some desiccated coconut into a small plastic bag then add a few drops of the food colouring of your choice. Seal the bag then shake it and rub the bag in your hands until the coconut is coloured. Spread the vanilla butter frosting over the tops of the cakes, then decorate with the lollies, licorice, marshmallows, chocolate sprinkles and coloured coconut.

Take the butter out of the refrigerator about 30 minutes before you start to cook.
