Butter cream


1.Sandwich three sponges together upright with a little butter cream. Use a serrated knife to trim two long sides of cake into a wheelie bin shape (make the top edge into a 12cm (4¾-inch) square and the bottom edge 11cm (4½-inch) square.
2.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
3.Secure cake onto the cake board with a little butter cream. Tint remaining butter cream red; spread three-quarters of the butter cream over the top and sides of cake.
4.Position lollies over top of cake.
5.Use a serrated knife to trim remaining sponge into a 12cm (4¾-inch) square. Split cake in half; spread remaining butter cream all over top, sides and base of one cake. (Discard or reserve the remaining cake piece for another use).
6.Place the cake at an angle over the top of the lollies to create a lid; secure licourice tubes to the top to form handles.
7.Unroll each licourice strap until you are left with a 4cm (1½-inch) round; trim away unrolled pieces. Cut licourice rounds in half through the centre to make two wheels. Position wheels on the cake; secure M&M’s to the centre of the wheels with a little butter cream.

EQUIPMENT 20cm (8-inch) square cake board We’ve use a mixture of lollies to turn this into a rubbish bin. To make this a recycle bin, use a variety of milk bottles. Save any licourice off-cuts for another use.
