Choc fruit shortbread

1.Finely chop the fruit and set aside.
2.Beat butter and sifted icing sugar in bowl with electric mixer until light and creamy. Sift both flours together. Stir half the flour into butter mixture then stir in fruit and chocolate followed by the remaining sifted flour.
3.Turn mixture onto a clean bench and knead briefly to form a firm dough. Cut dough in half, wrap in plastic wrap and refrigerate 1 hour.
4.Preheat oven at 180°C.
5.Roll 1 piece of dough between baking paper until about 7mm thick. Cut dough into shapes using a 6.5cm star cutter.
6.Place shapes onto lightly greased oven trays and bake for 10-12 minutes or until lightly browned.
7.Stand biscuits on trays for a few minutes then transfer to a wire rack to cool. Repeat process with remaining dough. Sieve with icing sugar just before serving, if desired.
