1.Heat olive oil in medium saucepan, cook onion until browned lightly. Add chipotle chilli, tomatoes and water to pan, simmer, uncovered, about 15 minutes, stirring occasionally, until chilli and tomatoes soften.
2.Cool, remove and discard stem from the chilli, blend chilli with tomato mixture until smooth. Meanwhile, cut chicken breast fillets into cubes. Thread chicken onto 12 skewers, brush with a little olive oil, season. Cook skewers on heated oiled barbecue (or grill or grill pan). Brush chicken with half the chilli sauce during the last few minutes of cooking.
3.Serve with remaining chilli sauce, lime wedges and coriander (cilantro) leaves.
