Swordfish with Thai dressing

This simple swordfish with Thai dressing should be cooked on a barbecue or griddle pan just before serving to help keep the fish at it's tender, juicy best.

Method

1.Combine all of the ingredients, except the fish, in a screw-top jar; shake well.
2.Barbecue (or grill or pan-fry) the fish until browned on both sides and cooked as desired.
3.Drizzle the dressing over the fish and serve with mixed salad leaves and lemon wedges, if desired.

Not suitable to freeze. Suitable to microwave.
