Quail eggs with dukkah

Served on a bed of sea salt and fresh sprigs of chervil, these soft-boiled quail eggs are perfect for a cocktail party.

1.Place eggs in a single layer in wide saucepan. Barely cover eggs with water; cover, bring to the boil. Boil for 1½ minutes; drain eggs, rinse with cold water. Crack shell of each egg; place eggs in bowl of cold water. Shell eggs under cold water.
2.Sprinkle eggs with dukkah; serve on a bed of sea salt flakes sprinkled with chervil.
