Method

1.Drain tomatoes; reserve 2 tablespoons of the oil.
2.Cook zucchini and haloumi cheese on heated oiled grill plate (or grill or barbecue) until browned lightly.
3.Divide spinach leaves, cheese, tomatoes and zucchini among serving plates. Whisk reserved oil, juice and rosemary in small bowl; serve dressing with salad.
