Meatloaf
Preheat oven to 200°C/400°F. Line a large oven tray with baking paper.
Place bread and milk in a large bowl; stand 10 minutes.
Heat oil in a small frying pan over medium heat; cook onion and garlic, stirring, for 5 minutes or until softened.
Add onion mixture to bread mixture with carrot, beef mince, parsley, egg and tomato paste; season well. Combine ingredients well using your hands.
Shape mince into a 30cm (12in) log in centre of baking paper. Cover mixture with pancetta slices, slightly overlapping.
Combine barbecue sauce and brown sugar in a small bowl. Brush over meatloaf.
Bake meatloaf for 45 minutes or until cooked through.
Individual meatloaf recipe variation
Bake mini sized meatloafs in individual tins for 20 minutes.
