1.Heat oil in a large frying pan on high. Cook chicken fillets for 4-5 minutes each side until browned and cooked through. Cool and slice thinly.
2.In a large bowl, combine chicken slices with remaining ingredients except almonds.
3.To make dressing, place all ingredients in a food processor or blender. Process until smooth. Season to taste.
4.Sprinkle salad with toasted almonds. Drizzle dressing over salad just before serving.
Add a little extra honey to dressing if it is too tart. Toast almonds in a dry frying pan over a medium heat for 2-3 minutes until golden.Note
