1.Thread one lemon wedge onto each of eight bamboo skewers. Thread scallops onto skewers.
2.To make lemon tarragon dressing, combine juice, oil, tarragon and mustard in a small bowl and whisk to combine.
3.Spray heated barbecue grill plate with cooking-oil spray for 2 seconds. Cook skewers about 1 minute each side or until cooked as desired.
4.Serve scallops with lemon tarragon dressing and mesclun.

Soak bamboo skewers in cold water for at least 30 minutes before using to prevent the skewers burning during cooking.
