1.Rinse quails and pat dry with absorbent paper.
2.Heat 2 tablespoons of the oil in a large frying pan over high heat.
3.Combine quails, remaining oil and cajun seasoning in a large bowl; season. Cook quail, skin-side down, 5 minutes or until browned. Reduce heat and turn quail over, cover pan. Cook about 5 minutes or until quail is cooked through.
4.Meanwhile, combine whole garlic, corn, sour cream and cream in medium saucepan. Stir over heat until mixture boils. Reduce heat and simmer uncovered for about 5 minutes or until mixture thickens. Remove from heat. Blend mixture with a stick blender until almost smooth. Season to taste.
5.Serve quail with creamed corn mixture. Accompany with peppers and lime. Sprinkle with coriander before serving.
