White bean puree


1.Cut onion through the middle into 12 wedges.
2.Thread onion, mushrooms, tomatoes and zucchini equally among 12 skewers. Place skewers on large tray; drizzle with combined vinegar and oil.
3.To make white bean puree; combine beans and broth in large saucepan; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes or until liquid is absorbed. Blend or process bean mixture with garlic, juice and oil until smooth.
4.Meanwhile, cook skewers on heated oiled grill or grill pan until browned all over and tender. Serve skewers on white bean puree.

You need 12 skewers; if using bamboo skewers, soak them in water 1 hour before use to prevent splintering or scorching.
