1.Place corn kernels in a large bowl, add creamed corn, shallots, basil, flour and eggs and mix until well combined.
2.In a heated, well-greased, large non-stick frying pan, place heaped tablespoons of mixture. Cook until golden underneath, then turn fritters and cook the other side.
3.Remove fritters from pan, drain on paper towel and keep warm. Continue cooking process with remaining mixture.
Accompany fritters with a salad for a light meal or serve them as a side dish if preferred. Fritters can be cooked a day ahead. Keep in an airtight container in the refrigerator. Place fritters on an oven tray and reheat in a 150°C oven as required.Note
