Caramelised bananas

To make these caramelised bananas even more delicious, you can soften the ice-cream slightly, layer it in cups with the fruit and top with crushed nuts to make a parfait.

1.Heat butter in a large frying pan, add sugars and water. Stir over heat, without boiling, until sugar dissolves. Stir in cream and bring to the boil. Add banana, stir gently to coat in caramel.
2.Serve caramelised bananas with ice-cream or cream, if you like.
