Make these quick and easy air fryer banana muffins with pecans for an after-school snack or fun baking activity for the kids. And because they’re free-form, you don’t need to worry about fitting a muffin tray in your air fryer!

1.

Triple layer 27 paper muffin cases to make nine thick cases.

Combine flour and sugar in a large bowl. Whisk egg, vanilla, oil and milk in a medium bowl; add to dry ingredients, stirring until just combined. Fold banana into mixture until just combined. Divide mixture evenly among muffin cases.

Preheat a 7-litre air fryer to 160°C for 3 minutes, if advised by the manufacturer.

Taking care, place filled muffin cases in the air fryer basket, then top each with three pecan halves; at 160°C, cook for 17 minutes or until a skewer inserted into the centre of a muffin comes out clean. Transfer to a wire rack.

5.

Stir a teaspoon of extra vanilla bean paste into the whipped cream or yoghurt and serve with warm muffins.

Use tongs with silicone ends to transfer muffins from the air fryer basket, to protect the surface of the appliance.
