Christmas cake ice-cream terrine

Oranges, orange liqueur and Christmas cake form the basis of this incredibly quick and simple ice-cream terrine.

1.Line 14cm x 21cm loaf pan with plastic wrap. Brush cake slices with liqueur. Stir rind into softened ice-cream.
2.Spread half the ice-cream mixture into pan, top with cake slices then remaining ice-cream. Cover with plastic wrap, freeze until firm.
3.Using hot knife, cut terrine into six slices to serve.
