Zucchini walnut loaf

This recipe is easy to make, easy to freeze, moist and delicious. A winner on all fronts.

Method

1.Preheat oven to 180°C/350°F. Grease 15cm x 25cm (6-inch x 10-inch) loaf pan; line base and long sides with baking paper, extending paper 5cm (2 inches) above edges.
2.Beat eggs, sugar and oil in large bowl with electric mixer until combined. Stir in zucchini, walnuts and sifted flours, in two batches. Spread mixture into pan.
3.Bake loaf about 1¼ hours. Stand in pan 5 minutes before turning, top-side up, onto wire rack to cool. Serve with butter if you like.

You need 3 medium zucchinis (360g) for this recipe.
