Method

1.Preheat oven to 180°C. Line oven trays with baking paper.
2.Beat butter, sugar and extract in small bowl with electric mixer until smooth. Transfer to large bowl. In two batches, stir in sifted flour. Stir in cranberries and grated chocolate.
3.Drop tablespoons of mixture about 5cm apart onto trays. Bake about 15 minutes; cool on trays.
4.Melt white chocolate melts in small heatproof bowl over small saucepan of simmering water; tint with pink food colouring. Drizzle chocolate over biscuits; stand at room temperature until set.
