Strawberry and fruit bread pudding

1.Preheat oven to 160°C (140°C fan-forced). Lightly grease shallow 1-litre (4-cup) ovenproof dish.
2.Spread bread with jam; place bread in dish, overlapping slightly.
3.Whisk cream and eggs together in medium jug; pour over bread.
4.Place dish in large baking dish. Pour enough boiling water into baking dish to come halfway up sides of ovenproof dish.
5.Bake about 45 minutes or until pudding sets. Remove pudding from baking dish; stand 5 minutes before serving.

You don’t have to use fruit bread, ­you could use white bread, croissants or panettone. Croissants are particularly delicious with the strawberry jam.
