Beautifully creamy and wonderfully versatile, a classic rice pudding is just perfect for dessert. Creamy vanilla rice pudding, served hot or cold is a favourite comfort food that works just as well served cold in summer as it does to warm you up in winter. This version has sultanas for bursts of delightful sweetness. We prefer ours served topped with fruit or nuts.

1.Preheat oven to 160°C (140°C fan-forced). Lightly grease shallow ovenproof dish (4-cup capacity).
2.Wash rice well under cold water; drain well. Combine rice, milk, sugar, sultanas and essence in prepared dish, mix lightly with a fork. Dot top with butter, sprinkle lightly with nutmeg.
3.Bake about 2 hours or until most of the milk has been absorbed.
4.Serve warm or cold with fruit, if desired.

This creamy pudding is perhaps the most loved and homely of British desserts.
