Dijon vinaigrette

Method

1.Preheat oven to 200°C/400°F.
2.Discard beetroot stems and leaves, place unpeeled beetroot in small shallow baking dish. Roast, uncovered for about 45 minutes or until beetroot is tender. Cool 10 minutes, peel beetroot, then cut into wedges. To save time 200g of drained baby beetroot could be used.
3.Meanwhile, make dijon vinaigrette. Combine mustard, olive oil and vinegar in screw-top jar and shake well.
4.Using mortar and pestle, crush seeds and oil into a paste and rub into pork. Lightly spray heated grill plate (or grill or barbecue), cook pork until browned both sides and cooked as desired.
5.Place beetroot, cheese, radish and rocket in large bowl with vinaigrette, toss gently to combine. Serve salad with pork.
