Passionfruit and lime delicious

Bake something zesty for a change with this tempting pudding. Passionfruit and lime give this light, fluffy dessert a fantastic fruity flavour.

1.Preheat oven to 180°C (160°C fan-forced). Grease a 2-litre (8-cup) ovenproof dish.
2.Beat the butter, rind and sugar in a small bowl with an electric mixer until combined. Beat in egg yolks, one at a time. Transfer to a large bowl. Beat in flour and milk, in two batches, then stir in lime juice and passionfruit pulp.
3.Beat the egg whites in a small bowl with an electric mixer until firm peaks form. Using a large metal spoon or balloon whisk, fold the egg white into the passionfruit mixture. Spoon the mixture into prepared dish. Place dish into a baking dish and pour boiling water into the baking dish to come halfway up the sides of the pudding dish. Bake for 1 hour.

Not suitable to freeze or microwave.
