Method
1.Secure cake to 30cm x 50cm rectangular cake board with a little frosting. Spread frosting over top and side of cake.
2.Using picture as a guide, build the emu’s neck with Venetian biscuits, securing them together with a little frosting.
3.Position the muffin at the top of the neck for the head; secure with a little frosting. Spread top and side with frosting.
4.Using picture as a guide, decorate head and body with coconut.
5.Cut one wafer into two triangles; position on head for beak. Position marshmallow on head for eye, top with jube and Tic Tac; secure with a little frosting.
6.Build the emu’s leg with macaroons, attaching them together with a little frosting. Position three pieces of bananas for claws.
7.Position finger biscuits on the board at the back of the emu’s body to resemble tail feathers.
Macaroons are available from specialty bakery shops and select supermarkets. If you can’t find them, any small round filled biscuit will do. Try mini Oreos or mini Wagon Wheels, or Monte Carlos.
