Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Line 2 oven trays with baking paper.
3.Beat butter and caster sugar in a small bowl with an electric mixer until light and fluffy. Stir in flour, nuts, rind, extract and yolk.
4.Shape level tablespoons of dough into rectangles; place biscuits, about 2.5cm apart, on trays. Cover; refrigerate for 30 minutes.
5.Bake biscuits for 25 minutes. Stand on trays for 5 minutes; transfer to wire racks; cool. Dust with icing sugar.
