1.Preheat oven to 180°C (160°C fan-forced).
2.Halve the pears and scoop out the core with a teaspoon. Place the pears, skin-side up, on a cutting board and take a thin slice from the top of each pear (this will give them a flat surface to sit on). Place pears in a shallow baking dish, skin-side down.
3.Rub the softened butter over each of the pears, then fill each of the hollowed cores with the maple syrup. Pour the white wine over the base of the dish; cover dish with foil. Bake for 20 minutes, then remove foil and return to the oven for a further 20 minutes or until pears are tender.
4.In a medium bowl, combine mascarpone and 2 tablespoons of the cooking liquid from the baked pears; stir to combine. Serve pears with the mascarpone.
