1.Preheat oven to moderate, 180°C. Line four oven trays with baking paper (see Notes).
2.In a bowl, combine all ingredients except chocolate. Mix well.
3.Spoon heaped tablespoons of mixture onto trays, shaping with damp fingers into 5cm rounds. Leave a 3cm gap between each.
4.Bake for 12-15 minutes, until golden brown. Allow to cool on trays 5 minutes, then transfer to a wire rack to cool completely.
5.Spread melted chocolate onto underside of florentines and allow to set.
We used a mixture of dark and white chocolate. Lightly spray trays with a little oil, to keep the baking paper in place. Makes 24Note
