Florentines

Some believe florentines to be an Italian creation. They're actually French. Wherever their origin, this recipe is just the ticket. Now will someone pop the kettle on?

Ingredients

Method

1.Preheat oven to moderate, 180°C. Line four oven trays with baking paper (see Notes).
2.In a bowl, combine all ingredients except chocolate. Mix well.
3.Spoon heaped tablespoons of mixture onto trays, shaping with damp fingers into 5cm rounds. Leave a 3cm gap between each.
4.Bake for 12-15 minutes, until golden brown. Allow to cool on trays 5 minutes, then transfer to a wire rack to cool completely.
5.Spread melted chocolate onto underside of florentines and allow to set.

We used a mixture of dark and white chocolate. Lightly spray trays with a little oil, to keep the baking paper in place. Makes 24
